~A Christmas Miracle~

Happy Friday everyone!! While some people’s Christmas celebration may be over, we are headed to one more family Christmas gathering this weekend! So a full holiday recap will take place on Monday!!

I know the title of this post has you all on pins and needles on what the miracle could have actually been…well I’m the baby in the family and with that I’ve always been babied!! Now that I’m married everyone (except for me) got the memo that I apparently can be in charge of something other than bringing the wine to family gatherings! HA! 

All kidding aside, I do enjoy cooking and over the last three years have become pretty good at it – I mean I can read and follow directions. 

My sister asked me to make two hot appetizers. I have one tried and true favorite of Stuffed Mushrooms and I found a new Caprese Dip Recipe online. I probably couldn’t have picked two more easier recipes, but I wanted to enjoy my family time.

Ladies this was BEYOND easy…my husband actually did the majority of work on this one and it came out fantastic. With only three ingredients I am positive we’ll be making it again! We used the wrong dish for this..pie dish instead of something a little smaller so the picture makes the dip look a little deflated/depressing. Not to worry, this sucker was gone in 5 minutes flat! The recipe does call for you to eat immediately and we followed that direction to a T!

The stuffed mushrooms I make can really include anything you want…but these are the basic steps to getting it done.

You’ll need

15-20 fresh mushrooms

3 tbsp of butter

2 tbsp finely chopped onions (I usually use 1 small onion)

1 sweet pepper

14-20 crackers (any type you’d like)

2 tbsp grated parmesan cheese

1/2 tsp Italian seasoning

  1. Pre-heat oven to 400° 
  2. Snap stems off mushrooms and chop 1/4 of a cup of them
  3. Chop onion(s) and peper
  4. Melt butter into skillet
  5. Add chopped mushrooms, onions and peppers – cook until tender
  6. Remove from heat and add crushed crackers, cheese and Italian seasoning. 
  7. Stir and stuff the mushrooms
  8. Bake for 15 minutes 
  9. ENJOY! 

Both of these were a smashing success and my BIL dubbed it “B-Licious” I’ll take it and hope you try these out as well!!
