Shrimp Saganaki


When reading through the Newlywed Cookbook, mind you I have never read a cookbook before, it wasn’t the name of the dish that caught my eye, but the ingredients that went into it. This was easily one of the top 5 meals that I have ever made and it was incredibly easy and not labor intensive in the least! 





What You’ll Need:


1/2 lb peeled shrimp


2 tbsp extra-virgin olive oil


3 oz. feta – I used President Feta Crumbled with sun dried tomatoes and olives


1 large bulb fennel or 1 large onion, thinly sliced – I used the onion


6 small ripened tomatoes- I used cherry tomatoes 


salt + pepper


red pepper flakes


Cooking directions:

If the shrimp you bought isn’t already slit down
the seam/vein, make sure to do so halfway. Wash them in salty water – think sea
water and then drain. 

Heat the oil in the frying pan and then add the
onion and cook over medium-heat until it’s soft. (about 5 minutes)

Add the tomatoes, salt and red pepper flakes and
once the tomatoes start to release their juices add the shrimp in. 

Shrimp Saganaki

Add most of the feta and stir to heat for about
3 minutes once the shrimp has cooked. To me, what made this so delicious was
the cheese – if you don’t mind feta, try getting a seasoned one!

Shrimp Saganaki

Transfer to a shallow bowl and top with
remaining feta. You can add parsley if you have some on hand – we didn’t!
Season with pepper as needed! Then serve hot – eat and enjoy!!
 

Paired with:

Boiled
Baby Potatoes with Garden Chives

Boiled Baby Potatoes

1 tbsp sea salt + more for seasoning

1 lb baby potatoes

2 tbsp extra virgin olive oil

handful chopped chives

If you have the time to boil the potatoes go for it – but we opted for the steam fresh variety and it cut the prep time down to 8 minutes! Once the potatoes are done, toss them with the oil and herbs in a serving bowl and mix/coat them and they are read to be served.

I honestly can’t say enough great things about this recipe, it was fast, easy and delicious!! I’ll be making this in the near future again!!

    oh my goodness, so simple! it sounds delicious. i have never cooked shrimp before, I don't even know where to buy it here lol. Do you think you could use frozen shrimp? I don't trust 'fresh' seafood in KY. lol. and steam fresh potatoes? tell me where to get these magnificent things.
