Tasty Eats | Spinach, Tomato & Bacon Quiche


I’m a huge fan of quiche!! I love that you’re able to mix in anything that sounds good to you, pop it into the oven and have breakfast, lunch or dinner ready within the hour! I made this quiche on Sunday night to have for dinner on Monday and it’s the perfect dish to reheat and eat throughout the week!! 


Ingredients:

1 box of frozen spinach

2 oz. on any cheese (I used a mac and cheese blend)

1/4 cup of another cheese (I used mozzarella)

1 cup of milk

4 eggs

1/2 tsp garlic

handful of cherry tomatoes

5 pieces of thinly sliced turkey bacon

1 pie crust (I used a pre-made one)

1. Preheat oven to 350 degrees

2. Spray your pie dish and lay down one pie crust

3. Thinly slice and cook the turkey bacon 

4. Combine eggs, milk, first batch of cheese & black pepper – mix well

5. Spread spinach on bottom of the pie dish

6. Layer the second cheese over the spinach

7. Layer the tomatoes & bacon on top

8. Pour egg mixture 

9. Sprinkle any additional cheese you’d like over the top

10. Cook for 45 minutes

11. Enjoy!! 




Yes those are also some of our leftover wedding napkins in the background, I went a little overboard ordering them!! 




You can choose to make this without a pie crust – just make sure the dish is sprayed so that your spinach doesn’t stick to the bottom!

    i love quiche so much it's a bit silly. but i cant have the crust (gluten) so i make frittatas, and thats why it burns – it doesnt stick though. i've only tried to make it in a cast iron skillet though so maybe i need to try it in my pie pan without the crust… hmm. KC doesn't like a lot of cheese so he won't eat my quiche or frittatas πŸ™
