Linguine with Sausage


With our recent spiralizer purchase, it’s pretty rare for us to make pasta anymore, but since it was Valentine’s Day we decided to splurge a little and try our hands at the linguine with sausage from the Newlywed Cookbook. Side note, this is one of my favorite cookbooks and so easy to follow the recipes! 





What You’ll Need:

Linguine with Sausage


1 lb sweet or spicy Italian sausage – we used Al Fresco Sweet Italian Style Chicken Sausage 


2 tbsp extra virgin olive oil


1 lb linguine 


Salt & Pepper


4 large egg yolks


1/2 cup of whole milk


3/4 cup of grated Parmesan cheese


Grated zest of one lemon


Handful of fresh chives, chopped



Instructions:


1.  Peel back the skins and cut the sausage into little blunt-edged meatballs


2. Heat the olive oil in a large frying pan and cook the sausage until golden brown all over – approximately 5 minutes. 


3. While the sausage is cooking, cook the linguine in salted water until al dente, 3-5 minutes for fresh or 10-12 minutes for dried

4. In a small bowl, whisk together the egg yolks, milk, half the cheese, pepper and the lemon zest

5. Drain the pasta and reserve 1/2 cup of the cooking liquid

6. Add the pasta, egg mixture & sausage into the pot and mix together. The heat from the pasta will thicken the egg to a silky sauce

7. Add anywhere from 3/4 to 1/2 of the pasta water to loosen. 

8. Toss with the remaining cheese and chives, serve & enjoy!

This was actually my first time having an egg sauce with my pasta and I really enjoyed it. We followed the recipe exactly and had enough left over to enjoy for lunch the next day. I can see us making this during the week since it took about 25 minutes total to prepare!

    Looks sooo good!! My kids(and Marc) like the chicken sausage with apple. I didn't tell them it wasn't "regular" sausage until after they tried it lol. Getting the boys to try a new food is a big accomplishment in our household. The first time it was cooking Luke looked in the pan and commented oh you're making hot dogs and I just responded yes I am as nonchalantly as possible. The less pressure you put on them the better the outcome lol. Can't wait to try this! xo

    Yum!! This sounds delish! Eric makes a pasta carbonara (I know I'm totally spelling that wrong, oops!) with an egg sauce that is DELISH! I shared the recipe somewhere on my blog, yum! It still intimidates me to use an egg sauce when I'm the one cooking though, ha!

    This looks amazing Biana! I love light pasta dishes, so I prefer to just use a small amount of parmesan cheese mixed with the water that you cook your noodles in {makes a great light sauce} and fresh herbs! And now I'm officially hungry πŸ˜‰
