Tasty Eats | Grilled Chicken Tacos with Avocado Salsa


I found these Grilled Chicken Tacos a few weeks ago and couldn’t wait to try it out. I changed the recipe a bit, mostly because we don’t have a grill, so we used our George Foreman, but you could also use a pan to grill the chicken up! 

Grilled Chicken Tacos



What You’ll Need:


4 boneless chicken breasts cut into small pieces


1 large onion 


1/2 teaspoon ground cumin


1/2 cup of mayo 


Juice from 1 lime


1 teaspoon hot sauce (used buffalo sauce)


2 large avocados


3 green onions minced


1 tablespoon cilantro


2 finely diced tomatoes 


8 flour tortillas





Directions:


+ In a large bowl combine ½ teaspoon salt, ¼ teaspoon ground cumin and ¼ teaspoon black pepper. Place the chicken pieces in the bowl to toss and coat with the seasoning. 


+ In a small bowl mix together mayo, 2 tablespoons of lime juice, 1 teaspoon of hot sauce, ¼ teaspoon of cumin, stir in water 1 teaspoon at a time until the mixture can be drizzled.

+ In another bowl mix together the diced avocados, the finely diced tomatoes, minced green onions, 2 tablespoons of lime juice, 1 tablespoon of fresh cilantro, ¼ teaspoon of hot sauce, olive oil & salt to taste

+ This is where the recipe really differs since we didn’t use skewers. You want to brush the chicken with olive oil and sprinkle with salt and pepper on the grill or pan. Place the chopped onions on the grill or pan to heat them and cook them up a bit. 




+ While the chicken is cooking heat up the tortillas either in a pan or in the oven.

+Assemble your tacos, the mayo mixture is your sauce!

We added cheese because no taco is complete without cheese! Enjoy!

    My favorite taco recipe is…literally any recipe ever. I've never met a taco I didn't like as long as it's not in a corn tortilla! Blech. That sauce looks incredible though! Must try.

    Oooooh, these sound super delish!! Am I crazy for wanting to skip the skewers completely and just grill the whole slab of meat? I know you didn't grill yours, but it seems like so much work to cut up raw chicken, place on sticks, THEN grill, when it would taste just the same to grill the meat then cut it up after, ha ha!
