Cinco de Mayo Inspiration


Happy Cinco de Mayo everyone!! I have to be honest, when this holiday falls during the week it’s hard to get as excited as I did when I was in college. The fact that it fell on a Tuesday, just means that Taco Tuesday will be in a full effect and I’ll need to add some fun fiesta touches to our dinner! 



To Drink//


Frozen Margarita//Strawberry Mojito//Prickly Pear//Dolled Up Mule




Let’s be honest, mojitos and margaritas sound enjoyable just about any time, but on this day, it’s almost mandatory! How delicious do these Sangria Swirled Frozen Margaritas look! 



To Eat//


Southwestern Quinoa//Baked Chicken and Spinach Flautas


Chicken Burrito Bowls//Shrimp and Avocado Salad




While we may end up making the Grilled Chicken Tacos from a few weeks back a  few of these recipes are mighty enticing! Specifically the Chicken Burrito Bowls! I’ve made the Zesty Lime Shrimp and Avocado Salad and it’s a refreshing winner!

I made these baked churros a little over a year ago and not sure why I haven’t made them since because they are delicious!! Lisa’s sugar cookie tacos would also be really delicious to eat and a little healthy too!

    Have you ever tried dicing up fresh mangoes, avocado, and tomato and mixing it with corn and taco seasoning? It's seriously the best! Plus it mixes all sorts of sweet and spicy! Can't wait to go to dinner tonight! Taco Tuesday. (;

    Eric lived in Mexico City for two years and he LOVES to tell me that they don't celebrate their independence day on May 5th, so he's never been into celebrating Cinco de Mayo. Lame! Ha!

    YUMMM!! I just googled a bunch of healthy cocktail drinks to find one I want to make tonight! I am thinking staying pretty simple with fresh lime juice, tequila and seltzer water with some fresh fruit mixed in.

    I basically love all of the Mexican food all of the time, so all of this is drool worthy for me!!! Those baked flautas look so yummy!!! I am making my Mexican Skillet Casserole tonight. It is fairly healthy and will provide left overs for another night this week. Win win for me!

    I have an awful craving for Mexican food now! We often don't celebrate holidays on the actual day (husband is in upper management at one of the large retail chains), but I think I will make tacos in a few days! I also like frozen taquitos for when I don't feel like messing with a lot of ingredients. They go nicely with Bud Light Lime.
