Shrimp Scampi with Zoodles


It’s been a while since I shared a recipe and after a weekend spent indulging, we needed something light but still tasty! I didn’t follow a recipe, but used a seriously delicious pre-made sauce that made all the difference! 

Zoodles with Shrimp


What You’ll Need


1 small onion


1 package grape tomatoes


2 large zucchinis 


1 package of shrimp (35-40 in package)


Campbell’s skillet sauces – shrimp scampi


Package so you know what to look for! Not a sponsored post, just found this in the store and wanted to try it! 

Zoodles with Shrimp Scampi


Directions


1// While your skillet is heating up with 1/2 tablespoon of olive oil, dice up your onion and tomatoes – small pieces


2// Use your spiralizer (this is the handheld one I use) to make your zoodles – then put off to the side


3// Add the onion and tomatoes and cook until tender. About 3-4 minutes


4// Add in your shrimp. If you picked pre-cooked shrimp stir in the sauce immediately. If your shrimp are raw, cook thoroughly and then add in sauce. 


5// You’ll want the sauce to boil and then turn it down to a medium simmer – I left it on for about 6 minutes to thicken up a bit. 


5// While the sauce is simmering use another skillet to cook the zoodles. Add salt and pepper to taste and cook the zoodles for about 3 minutes


6// Remove the zoodles and plate with shrimp and a little sauce on top! 


Bonus// If you have some fresh Parmesan add this as well!

    oh yum I love shrimp scampi! I made something similar from scratch but i'm all about cutting down the time and number of ingredients so will definitely check out the skillet sauce next. Didn't even know those sauces existed!!
