Tasty Eats | Creamy Ravioli with Squash and Lemon


Let’s just say that this is one of my favorite pasta recipes for Summer! The squash with lemon zest gives it that freshness that you really want to taste in a pasta dish when it’s hot outside!! It’s got the man seal of approval from Gary and will be made throughout the season no doubt! 

Creamy Ravioli with Squash and Lemon


What you’ll need:


16 or 18 oz. frozen cheese ravioli (used ricotta and spinach stuffed ravioli)


1 tbsp olive oil


1 shallot – chopped


4-5 squash and zucchini thinly sliced in circles and then cut in half


3/4 cup heavy cream


1 tbsp lemon zest


3/4 cup Parmesan cheese (used asiago and Parmesan)


2 tbsp of chives – chopped

Creamy Ravioli with Squash and Lemon


//While your pasta is cooking, heat oil in a large skillet over medium heat and add your chopped shallot – stir for 3-4 minutes


//Add in your squash and zucchini with salt and pepper to taste – stir for 4-5 minutes


//Add the cream & lemon zest into the skillet – your cream should start to thicken – timing depends on stove


// Drain pasta and add a little olive oil so it doesn’t stick – then add in your pasta to the skillet with 1/2 the cheese


//Sprinkle chives, add additional cheese, serve and enjoy!

    This looks soooo good! My husband loves a good ravioli and I love zucchini and lemon so it's a match! Ha!!! I like to make a skillet zucchini medley with mushrooms, yellow squash, onion, eggplant etc and sprinkle with seasonings and fresh parm. It's a nice summer side. I love all the fun things you can create with a bag of ravioli. Yummy! Have a wonderful day!!

    This looks amazing!!! I am trying my best to stick to a whole 30 type of diet and it has only been 4 days lol. I needed a little extra push this month before we head to the beach in June! It hasn't been easy as I've been doing cupcake orders lately and everyone else in the house still expects their regular meals lol. xo I will eventually try this though. It looks really good.

    Yum, that does sound good and the lemon zest and fresh chives cut through the richness of the sauce. I bet it would be good with peas and asparagus too!

    (Side note: is Bloglovin' still not working for you? Mine was super slow to update for a while, like a 24 hour delay. But now it hasn't loaded any of my new content since last Wednesday! And their customer support? Nonexistent.)
