Tasty Eats | Salmon Burgers from Blue Apron

Salmon Burgers | Blue Apron

It happened again – we had an amazing experience with our Blue Apron delivery last week and all three of our meals were gourmet quality! Not only were these meals ridiculously good, but I wanted to share our favorite one – Salmon Burgers with Creme Fraiche Sauce and Potato Salad so that you could recreate it at home!

Salmon Burgers | Blue Apron

What You’ll Need

|| 1 8 ounce Salmon Fillet

|| 2 Potato Buns (Burger Buns)

|| 2 Garlic Cloves

||1 Lemon

||Β½ Pound red potatoes

|| 1 Bunch of Mint

|| 2 tablespoons of capers

|| 1 Shallot

||  ΒΌ Cup of Breadcrumbs

|| β…“ Cup of Creme Fraiche

Time and time again what keeps me coming back to Blue Apron are the perfectly portioned meals without having to waste any  ingredients and that the meals are all healthy with this one being 700 calories.

Salmon Burgers | Blue Apron

Step 1:
Preheat the over to 450Β° – place the salmon skin side down and drizzle with olive oil and season with Salt & Pepper to taste. Roast in the oven for 10-12 minutes – I kept mine in a little longer at 15. Using a spatula carefully lift the salmon off its skin and in a bowl flake the roasted salmon with a fork into small pieces. It’ll look like tuna!

Step 2: While the salmon is roasting, bring a medium pot of water to a boil.

  • Halve the buns
  • peel and mince the garlic
  • quarter the potatoes
  • pick the mint off the stems
  • roughly chop the capers
  • using a peeler remove the rind of the lemon to get 2 teaspoons of zest
  • quarter and de-seed the lemon
  • peel and mince the shallot
  • place the minced shallot in a bowl with the juice of all 4 lemon wedges – season with salt and pepper

Step 3: In a medium bowl, combine the creme fraiche, shallot-lemon juice mixture and half of the mint (roughly chopped) – season with salt and pepper

Step 4: Add the potatoes to the water and cook for 13 minutes or until tender. Drain thoroughly and return to the pot, but make sure it’s off the heat. Add the caper and half of the creme fraiche sauce. Stir to combine and season with salt and pepper to taste.

Step 5: While the potatoes are cooking, add the breadcrumbs, garlic, lemon zest and remaining mint (roughly chopped). Gently mix to combine. Form the mixture into two thick patties by squeezing firmly to ensure that they are tightly packed.

Step 6:
Add the patties and cook for 3 minutes per side or until golden. Transfer them to a paper towel after thoroughly cooked.

Step 7:
Carefully wipe the same pan and toast the buns. To create the finished product add the cooked patty to the bun and add the remaining creme fraiche sauce equally to each burger.
