Easy Summer Dinners


Happy Monday friends! Hope you’re coming off of a great summer weekend! Switching things up this week and sharing a few easy summer dinners with you! If I can find a dinner that minimizes the amount of time I spend in the kitchen but adds time to enjoy the daylight, then I’ll cook it! Even better when it’s under 20 minutes and tastes fresh! This isn’t a recipe post because these are that simple to make!

Shrimp Garden Salad

Don’t be fooled by this salad – it’s incredibly filling! I know some people aren’t fans of shrimp, so you could substitute this with chicken or steak! I like to add cucumbers, tomatoes & red peppers to make it more colorful and flavorful! I think the chopping takes the most time here- bringing this total to about 10 minutes! 

Turkey Sausage Stir Fry

Grab a bag of your favorite veggies – we like the one’s from Trader Joe’s and then add any form of turkey sausage! You’re done in about 12 minutes, just add a sauce or seasoning and enjoy! 

Cod with rice pilaf & broccoli

I found these frozen cod filets at Whole Foods and they come with all the seasoning that you’ll need., all you have to do is add the sides. This is the longest dinner I have on the list, but it’s still under 25 minutes! The fish is very flavorful so check to see if your local Whole Foods has one.


Naan Pizza

I did a post on our favorite Naan Pizzas a couple years ago and it’s still one of our go to weeknight dinners! Pretty much any type of topping you can think of will work and you pop it in the oven for 12-15 minutes and you get a nice and crispy naan bread! I’d like to say that Gary and I share our pizza’s but we don’t – one for him and one for me!


Turkey Zoodles

I’m the worst when it comes to taking photos of our turkey zoodles because we eat them so fast there’s no time for pictures! I get the zucchini that is already zoodled – you lightly toss them on medium heat with oil for no more than 2 minutes – so that they are still crispy. I cook ground turkey and add some Italian seasoning with pasta sauce and then mix it all together! Voila – turkey zoodles that taste like pasta in 12 minutes or less!

    I am all about light and refreshing dinners in the summer! Chris loves to grill anything and everything, and I just try and maximize the veggie intake! But, pizza has my heart and those pizzas look soooo good!

    I always see the Naan bread at the grocery and think that I need to make pizza and somehow chicken out, every time! The easier the better for weeknight meals so I've got to toughen up (lol) and try it!!

    All of these recipes look delish and I love they they're fast and easy! I actually made something quite similar to the sausage recipe last night! I used vegan Italian sausage instead and added onions, peppers, and spinach; it was SO quick and easy, as you've said! You definitely gave me some ideas here, I've never made naan pizza before!     LOVE everything that you posted here! Do you know what I like to do with shrimp when I saute it? I like to sprinkle some panko on top while it is in the pan…..it coats it just enough to give it a little ooomph! With garlic in the pan…….yum!!! I also use those low cal wraps for pizza too….many of them hold up quite well! xoxo catchatwithcarenandcody

    I make chicken stir fry all the time, and I can't believe I've never thought to use turkey sausage instead! It would be so much easier! And less gross! I always hate cutting up raw chicken. Yuck!

    um, that turkey sausage stir fry is SUCH a good idea. I don't think i've ever had turkey sausage though – i mean, i've had turkey breakfast sausage but not normal sausage. can you just get it at trader joes as well?
