Cinco de Mayo Inspiration
Happy Cinco de Mayo everyone!! I have to be honest, when this holiday falls during the week it's hard to get as excited as I did when I was in college. The fact that it fell on a Tuesday, just means that Taco Tuesday will be in a full effect and I'll need to add some fun fiesta touches to our dinner!

Let's be honest, mojitos and margaritas sound enjoyable just about any time, but on this day, it's almost mandatory! How delicious do these Sangria Swirled Frozen Margaritas look!
To Eat//
Southwestern Quinoa//Baked Chicken and Spinach Flautas
Chicken Burrito Bowls//Shrimp and Avocado Salad
While we may end up making the Grilled Chicken Tacos from a few weeks back a few of these recipes are mighty enticing! Specifically the Chicken Burrito Bowls! I've made the Zesty Lime Shrimp and Avocado Salad and it's a refreshing winner!

I made these baked churros a little over a year ago and not sure why I haven't made them since because they are delicious!! Lisa's sugar cookie tacos would also be really delicious to eat and a little healthy too!

ReplyDeleteEric lived in Mexico City for two years and he LOVES to tell me that they don't celebrate their independence day on May 5th, so he's never been into celebrating Cinco de Mayo. Lame! Ha!
College Cinco de Mayo celebrations were the absolute best! How adorable are those sugar cookie tacos??

ReplyDeleteYUMMM!! I just googled a bunch of healthy cocktail drinks to find one I want to make tonight! I am thinking staying pretty simple with fresh lime juice, tequila and seltzer water with some fresh fruit mixed in.

I so agree on it’s tough when it falls during the week – I mean even if it could hit on a Thursday would be better but Tuesdays a tough one. The pink frozen margarita looks perfect! I’ve always wanted to try those little sugar cookie tacos!

My husband and I ended up doing a Cinco Happy Hour party on sunday, as Tuesday is just not as much fun. I need those churro cheesecake bars! And I ate paleo Mexican chili coconut fudge for breakfast today, and I'm pretty sure Ill be tequila popsicling come lunch.

I have an awful craving for Mexican food now! We often don't celebrate holidays on the actual day (husband is in upper management at one of the large retail chains), but I think I will make tacos in a few days! I also like frozen taquitos for when I don't feel like messing with a lot of ingredients. They go nicely with Bud Light Lime.

Wait I actually had that shrimp and avocado salad for lunch today!! I found it on Pinterest and made it yesterday for lunch for the week (I added some cold penne noodles to beef it up a bit though). It is so delicious!
